  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, heat sesame oil over medium heat. Add garlic, onion, and ginger. Sauté until fragrant.
  3. Add the rinsed rice to the pot and stir for 1-2 minutes.
  4. Pour in the chicken broth and add soy sauce, salt, and pepper. Bring to a boil.
  5. Once boiling, reduce heat to low, cover, and simmer for 15 minutes.
  6. Meanwhile, boil the whole chicken in a separate pot for about 30-40 minutes, or until fully cooked.
  7. Remove the chicken and let it cool. Shred the chicken into bite-sized pieces.
  8. Fluff the rice with a fork and serve on a plate topped with shredded chicken.
  9. Garnish with chopped green onions.
