A simple and delicious chicken rice recipe perfect for dinner.

- 1 whole chicken (about 3–4 pounds)
- 2 cups jasmine rice
- 4 cups chicken broth
- 4 cloves garlic, minced
- 1 onion, chopped
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a large pot, heat sesame oil over medium heat. Add garlic, onion, and ginger. Sauté until fragrant.
- Add the rinsed rice to the pot and stir for 1-2 minutes.
- Pour in the chicken broth and add soy sauce, salt, and pepper. Bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes.
- Meanwhile, boil the whole chicken in a separate pot for about 30-40 minutes, or until fully cooked.
- Remove the chicken and let it cool. Shred the chicken into bite-sized pieces.
- Fluff the rice with a fork and serve on a plate topped with shredded chicken.
- Garnish with chopped green onions.
Notes
- Make sure to check the chicken is fully cooked by cutting into the thickest part; the juices should run clear.
- Rinsing the rice helps remove excess starch and prevents it from being sticky.
- You can add vegetables like peas or carrots to the rice for extra flavor and nutrition.
