- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 flour tortillas
- 1/2 cup bell peppers, diced
- 1/4 cup onion, diced
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced bell peppers and onion. Cook until soft, about 5 minutes.
- Stir in shredded chicken and taco seasoning. Mix well and heat through.
- Place one tortilla in the skillet. Sprinkle half of the cheese on one half of the tortilla.
- Add half of the chicken mixture on top of the cheese.
- Fold the tortilla in half and cook for 2-3 minutes until golden brown.
- Flip and cook the other side for another 2-3 minutes.
- Remove from skillet and repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Ensure the skillet is hot before adding the tortilla for a crispy texture.
- Use a non-stick skillet to prevent sticking.
