- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 1/4 cup unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers

- Pepper to taste
- Fresh parsley for garnish
Instructions
- Flatten the chicken breasts to an even thickness using a meat mallet.
- Season both sides with salt and pepper.
- Dredge the chicken in flour, shaking off the excess.
- Heat olive oil and butter in a skillet over medium heat.
- Add chicken and cook for 4-5 minutes on each side until golden brown.
- Remove chicken and set aside.
- In the same skillet, add chicken broth, lemon juice, and capers.
- Bring to a simmer and scrape up any brown bits from the pan.
- Return chicken to the skillet and cook for another 3-4 minutes.
- Garnish with fresh parsley before serving.
