A simple and delicious chicken pad thai recipe for beginners.

- 8 oz rice noodles
- 1 cup chicken breast, thinly sliced
- 2 tablespoons vegetable oil
- 2 eggs
- 2 cloves garlic, minced
- 1 cup bean sprouts
- 1/4 cup green onions, chopped
- 3 tablespoons fish sauce
- 2 tablespoons sugar
- 1 tablespoon lime juice
- 1/4 cup crushed peanuts
- lime wedges for serving
Instructions
- Soak rice noodles in hot water for about 20 minutes until soft. Drain and set aside.
- Heat oil in a large pan over medium heat. Add garlic and cook for 1 minute.
- Add chicken and cook until no longer pink, about 5-7 minutes.
- Push chicken to one side of the pan. Crack eggs into the empty side and scramble until cooked.
- Add the drained noodles, fish sauce, sugar, and lime juice. Mix everything together.
- Add bean sprouts and green onions. Stir-fry for 2-3 minutes.
- Serve hot, topped with crushed peanuts and lime wedges.
Notes
- Make sure not to overcook the noodles.
- Adjust the fish sauce to your taste.
- For extra flavor, add chili flakes.
