Ingredients

  • 8 oz rice noodles
  • 1 cup chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 1/4 cup green onions, chopped
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 1 tablespoon lime juice
  • 1/4 cup crushed peanuts
  • lime wedges for serving

Instructions

  1. Soak rice noodles in hot water for about 20 minutes until soft. Drain and set aside.
  2. Heat oil in a large pan over medium heat. Add garlic and cook for 1 minute.
  3. Add chicken and cook until no longer pink, about 5-7 minutes.
  4. Push chicken to one side of the pan. Crack eggs into the empty side and scramble until cooked.
  5. Add the drained noodles, fish sauce, sugar, and lime juice. Mix everything together.
  6. Add bean sprouts and green onions. Stir-fry for 2-3 minutes.
  7. Serve hot, topped with crushed peanuts and lime wedges.

Notes

  • Make sure not to overcook the noodles.
  • Adjust the fish sauce to your taste.
  • For extra flavor, add chili flakes.
