- 500g chicken, cut into pieces
- 2 tablespoons cooking oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 1 tablespoon curry powder
- 1 teaspoon salt
- 1 cup coconut milk
- Fresh coriander for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add chopped onion and sauté until golden.
- Stir in garlic and ginger, cook for 1 minute.
- Add chicken pieces, cook until no longer pink.
- Mix in chopped tomatoes and curry powder, cook for 5 minutes.
- Add salt and coconut milk, stir well.
- Simmer for 20 minutes until chicken is cooked through.
- Garnish with fresh coriander before serving.
Notes
- Use boneless chicken for quicker cooking.
- Adjust curry powder to your taste.
- Serve with rice or bread.
- Leftovers can be stored in the fridge for up to 3 days.
