A delicious and easy chicken chimichanga recipe that anyone can make.

- 2 cups shredded cooked chicken
- 1 cup shredded cheese
- 1/2 cup refried beans
- 1/2 cup salsa
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 4 large flour tortillas
- Oil for frying
Instructions
- In a bowl, mix the chicken, cheese, refried beans, salsa, cumin, and chili powder.
- Warm the tortillas in the microwave for 20 seconds to make them flexible.
- Place about 1/4 of the filling in the center of each tortilla.
- Fold the sides of the tortilla over the filling and roll it up tightly.
- Heat oil in a pan over medium heat.
- Carefully place the chimichangas seam-side down into the hot oil.
- Fry for about 2-3 minutes on each side until golden brown.
- Remove and drain on paper towels.
- Serve with extra salsa or guacamole if desired.
Notes
- Use leftover chicken for quicker prep.
- Be careful not to overfill the tortillas.
- Adjust spices to your taste.
