Description

A delicious and easy chicken chimichanga recipe that anyone can make.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1/2 cup refried beans
  • 1/2 cup salsa
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 4 large flour tortillas
  • Oil for frying

Instructions

  1. In a bowl, mix the chicken, cheese, refried beans, salsa, cumin, and chili powder.
  2. Warm the tortillas in the microwave for 20 seconds to make them flexible.
  3. Place about 1/4 of the filling in the center of each tortilla.
  4. Fold the sides of the tortilla over the filling and roll it up tightly.
  5. Heat oil in a pan over medium heat.
  6. Carefully place the chimichangas seam-side down into the hot oil.
  7. Fry for about 2-3 minutes on each side until golden brown.
  8. Remove and drain on paper towels.
  9. Serve with extra salsa or guacamole if desired.

  • Use leftover chicken for quicker prep.
  • Be careful not to overfill the tortillas.
