- 1 pound ground chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat.
- Add the chopped onion and garlic. Cook until soft.
- Add the ground chicken. Cook until no longer pink.
- Stir in chili powder and cumin. Cook for 1 minute.
- Add the black beans, kidney beans, diced tomatoes, and chicken broth. Stir well.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Taste and season with salt and pepper as needed.
- Serve hot, garnished with your favorite toppings.
Notes
- Make sure to drain and rinse the beans to reduce sodium.
- Feel free to add more vegetables like bell peppers or corn.
- For a spicier chili, add diced jalapeños or cayenne pepper.
