Ingredients

  • 1 pound ground chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a little oil over medium heat.
  2. Add the chopped onion and garlic. Cook until soft.
  3. Add the ground chicken. Cook until no longer pink.
  4. Stir in chili powder and cumin. Cook for 1 minute.
  5. Add the black beans, kidney beans, diced tomatoes, and chicken broth. Stir well.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Taste and season with salt and pepper as needed.
  8. Serve hot, garnished with your favorite toppings.

Notes

  • Make sure to drain and rinse the beans to reduce sodium.
  • Feel free to add more vegetables like bell peppers or corn.
