Ingredients

  • 2 cups broccoli florets
  • 1 pound boneless chicken breast, diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked rice
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced chicken to the skillet and season with salt, pepper, and garlic powder.
  4. Cook the chicken until it’s no longer pink, about 5-7 minutes.
  5. Add broccoli florets and chicken broth to the skillet. Stir and cook for another 3-4 minutes.
  6. In a baking dish, combine the cooked rice, chicken mixture, and half of the cheese. Mix well.
  7. Top with remaining cheese.
  8. Bake in the oven for 20 minutes until the cheese is melted and bubbly.
  9. Let it cool for a few minutes before serving.

Notes

  • Make sure not to overcook the chicken. It should be just cooked through.
  • You can use frozen broccoli if fresh is not available.
  • Feel free to add other vegetables like bell peppers or carrots for extra flavor.
