- 2 cups broccoli florets
- 1 pound boneless chicken breast, diced
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup cooked rice
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken to the skillet and season with salt, pepper, and garlic powder.
- Cook the chicken until it’s no longer pink, about 5-7 minutes.
- Add broccoli florets and chicken broth to the skillet. Stir and cook for another 3-4 minutes.
- In a baking dish, combine the cooked rice, chicken mixture, and half of the cheese. Mix well.
- Top with remaining cheese.
- Bake in the oven for 20 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Make sure not to overcook the chicken. It should be just cooked through.
- You can use frozen broccoli if fresh is not available.
- Feel free to add other vegetables like bell peppers or carrots for extra flavor.
