Ingredients

- 10 cups water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, quartered
- 2 cloves garlic, minced
- 1 bay leaf

Instructions
- Place the chicken carcass in a large pot.
- Add water and bring it to a boil over high heat.
- Reduce heat to a simmer and skim off any foam that rises to the top.
- Add carrots, celery, onion, garlic, and bay leaf.
- Season with salt and pepper.
- Let it simmer for at least 1.5 hours.
- Strain the soup to remove solids.
- Taste the broth and adjust seasoning if needed.
- Serve hot and enjoy your soup.
