- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups cooked rice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cups shredded cheese
- 6 large tortillas, cut into strips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the chicken, black beans, corn, salsa, rice, cumin, and chili powder.
- In a greased baking dish, layer half of the tortilla strips.
- Spread half of the chicken mixture over the tortilla strips.
- Sprinkle with one cup of cheese.
- Repeat the layers with the remaining tortilla strips, chicken mixture, and cheese.
- Bake for 25-30 minutes until the cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- Use leftover chicken for quick preparation.
- Feel free to add your favorite veggies.
- For a spicier dish, add jalapeños to the mix.
