Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups cooked rice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups shredded cheese
  • 6 large tortillas, cut into strips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the chicken, black beans, corn, salsa, rice, cumin, and chili powder.
  3. In a greased baking dish, layer half of the tortilla strips.
  4. Spread half of the chicken mixture over the tortilla strips.
  5. Sprinkle with one cup of cheese.
  6. Repeat the layers with the remaining tortilla strips, chicken mixture, and cheese.
  7. Bake for 25-30 minutes until the cheese is bubbly.
  8. Let it cool for a few minutes before serving.
