Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add the pumpkin puree and eggs. Mix until well combined.
  4. In another bowl, whisk together the flour, cream of tartar, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
  6. In a small bowl, combine 1/4 cup sugar and 1 tablespoon cinnamon for rolling.
  7. Using a cookie scoop or your hands, form dough balls and roll them in the cinnamon sugar mixture.
  8. Place the dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are set.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
