- 1 pound smoked sausage, sliced
- 4 medium potatoes, diced
- 1 cup shredded cheese (cheddar or your choice)
- 1 onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine diced potatoes, chopped onion, olive oil, garlic powder, salt, and pepper.
- Spread the potato mixture evenly on a baking sheet.
- Top with sliced smoked sausage.
- Bake for 25-30 minutes until potatoes are tender.
- Remove from oven and sprinkle shredded cheese on top.
- Return to oven for 5 minutes, until cheese is melted.
- Let cool for a few minutes before serving.
Notes
- Check potatoes for doneness by poking with a fork.
- Feel free to add your favorite vegetables.
- Store leftovers in an airtight container in the fridge.
