Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 pound smoked sausage, sliced
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 onion, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, boil the diced potatoes until tender, about 10-15 minutes. Drain and set aside.
  3. In a skillet, melt butter over medium heat. Add chopped onion and sauté until soft.
  4. Add sliced smoked sausage to the skillet and cook until browned.
  5. In a large bowl, combine the cooked potatoes, sausage mixture, milk, sour cream, and half of the cheddar cheese. Mix well.
  6. Transfer the mixture to a greased baking dish. Top with remaining cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
