Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter.
  3. Line a muffin tin with cupcake liners.
  4. Press the graham cracker mixture into the bottom of each liner.
  5. In another bowl, beat cream cheese and 1/2 cup sugar until smooth.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in vanilla extract and sour cream.
  8. Pour the cream cheese mixture over the crust in each liner.
  9. Bake for 20-25 minutes until set but slightly jiggly in the center.
  10. Let them cool completely before refrigerating for at least 2 hours.
