- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup shredded carrots
- 1 cup corn (canned or frozen)
- 1 cup shredded cheddar cheese
- 1 cup milk
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic, cooking until the onion is soft.
- Pour in the beef broth and add diced potatoes and carrots. Bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Add corn, Worcestershire sauce, and milk. Stir to combine.
- Gradually stir in shredded cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with extra cheese if desired.
Notes
- For a thicker soup, mash some of the potatoes before adding the cheese.
- You can add cooked bacon bits for extra flavor.
- Feel free to use other vegetables like bell peppers or celery.
