Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix grated carrots, sugar, and oil.
- Add eggs one at a time, mixing well after each.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the carrot mixture until just combined.
- Fold in chopped walnuts if using.
- Pour the batter into a greased baking dish.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Grating the carrots finely makes them blend better in the batter.
- Check for doneness by inserting a toothpick in the center.
