Instructions

  3. In a large bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, whisk together the sugar, brown sugar, and oil until well combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Fold in the grated carrots, walnuts, and raisins if using.
  8. Divide the batter evenly between the prepared pans.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
