  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots, granulated sugar, and brown sugar.
  3. Add oil, eggs, and vanilla extract. Stir until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture. Mix until just combined.
  6. If using, fold in chopped walnuts.
  7. Pour the batter into a greased 9×13 inch baking pan.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool before cutting into bars.
