Description

Ingredients

  • Black pepper, to taste

Instructions

  1. Boil water in a large pot. Add a pinch of salt.
  2. Add spaghetti and cook according to package instructions until al dente.
  3. In a skillet, cook pancetta over medium heat until crispy.
  4. In a bowl, whisk together eggs and Parmesan cheese.
  5. Drain pasta, reserving some pasta water.
  6. Add pasta to the skillet with pancetta and mix well.
  7. Remove from heat and quickly stir in egg mixture, adding pasta water if needed for creaminess.
  8. Season with salt and black pepper to taste.
  9. Serve immediately with extra cheese on top.
