- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter, softened
- 1 egg yolk
- 1/4 cup white wine
- 1 cup ricotta cheese
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Chocolate chips for garnish
- Oil for frying
Instructions
- In a bowl, mix flour, sugar, and salt.
- Add butter, egg yolk, and wine. Knead until smooth.
- Wrap dough in plastic wrap and let it rest for 30 minutes.
- Roll out the dough thinly and cut into circles.
- Wrap circles around cannoli tubes and seal edges with a bit of water.
- Heat oil in a pan. Fry the tubes until golden brown. Remove and cool.
- In another bowl, mix ricotta, powdered sugar, and vanilla.
- Fill cooled tubes with the ricotta mixture.
- Sprinkle chocolate chips on top.
- Serve immediately or chill before serving.
Notes
- Ensure the dough is thin for a crispy shell.
- Don’t overcrowd the pan while frying.
- Allow shells to cool completely before filling.
