Ingredients

  • 2 lbs of chicken breasts
  • 1 can of diced tomatoes (14 oz)
  • 1 cup of corn (frozen or canned)
  • 1 cup of black beans (canned, drained and rinsed)
  • 1 packet of taco seasoning
  • 1 cup of chicken broth
  • 1 cup of shredded cheese (optional)

Instructions

  1. Gather all your ingredients.
  2. Place the chicken breasts at the bottom of the crockpot.
  3. Add the diced tomatoes on top of the chicken.
  4. Pour in the corn and black beans.
  5. Sprinkle the taco seasoning over the mixture.
  6. Pour the chicken broth into the crockpot.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Once cooked, shred the chicken with two forks and mix everything together.
  9. Serve hot and top with shredded cheese if desired.
