Ingredients

- 2 lbs of chicken breasts
- 1 can of diced tomatoes (14 oz)
- 1 cup of corn (frozen or canned)
- 1 cup of black beans (canned, drained and rinsed)
- 1 packet of taco seasoning
- 1 cup of chicken broth
- 1 cup of shredded cheese (optional)
Instructions
- Gather all your ingredients.
- Place the chicken breasts at the bottom of the crockpot.
- Add the diced tomatoes on top of the chicken.
- Pour in the corn and black beans.
- Sprinkle the taco seasoning over the mixture.
- Pour the chicken broth into the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix everything together.
- Serve hot and top with shredded cheese if desired.
