Ingredients

- 1 medium head of cabbage, chopped
- 1 large onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 1 can of diced tomatoes (14 oz)
- 8 cups vegetable broth
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until soft, about 5 minutes.
- Add chopped cabbage and stir for 2 minutes.
- Pour in the diced tomatoes and vegetable broth.
- Add garlic powder, salt, and pepper. Stir well.
- Bring the soup to a boil, then reduce heat and simmer for 30 minutes.
- Taste and adjust seasoning if needed.
- Serve hot and enjoy your healthy soup!
