- 1/4 cup bourbon
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the butternut squash.
- In a large bowl, mix the olive oil, bourbon, brown sugar, cinnamon, salt, and pepper.
- Add the cubed squash to the bowl and toss until evenly coated.
- Spread the squash on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Check for tenderness; it should be easily pierced with a fork.
- Remove from the oven and let it cool slightly before serving.

- Make sure to cut the squash into evenly sized cubes for even cooking.
- If you prefer a non-alcoholic version, you can replace the bourbon with apple juice.
