- 1 cup sugar
- 1 cup light corn syrup
- 4 cups chow mein noodles
- 1 cup chocolate chips
- 1/2 cup mini eggs (for decoration)
Instructions
- In a large bowl, mix together peanut butter, sugar, and corn syrup until smooth.
- Gently fold in chow mein noodles until fully coated.
- Use a spoon to scoop out portions of the mixture and form them into small nests on a baking sheet lined with parchment paper.
- Make a small indent in the center of each nest.
- Melt chocolate chips in the microwave in 30-second intervals, stirring until smooth.
- Drizzle melted chocolate over the nests.
- Place mini eggs in the center of each nest.
- Chill in the fridge for about 30 minutes to set.
Notes
- Make sure to mix the peanut butter and sugar thoroughly to avoid clumps.
- You can use any type of chocolate for drizzling.
- Store the cookies in an airtight container for up to a week.
