Ingredients

  • 2 lbs of chicken thighs
  • 4 cups of mixed vegetables (carrots, broccoli, bell peppers)
  • 1 cup of rice
  • 4 cups of chicken broth
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken thighs with garlic powder, onion powder, salt, and pepper.
  4. Brown the chicken thighs in the skillet for 5 minutes on each side.
  5. Remove chicken and set aside.
  6. In the same skillet, add mixed vegetables and sauté for 3-4 minutes.
  7. Add rice and stir for 1 minute.
  8. Pour in chicken broth and bring to a boil.
  9. Place the chicken thighs on top of the rice and vegetable mixture.
  10. Cover the skillet with a lid or aluminum foil.
  11. Bake in the oven for 30-35 minutes.
  12. Remove from oven and let it rest for 5 minutes before serving.

Notes

  • Make sure not to overcook the chicken to keep it juicy.
  • You can use any vegetables you have on hand.
  • For extra flavor, add herbs like thyme or rosemary.
