- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup sour cream
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- In another bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract.
- Pour the cream cheese mixture over the crust in the pan.
- Bake for 45-50 minutes or until the center is set.
- While it cools, mix sour cream and powdered sugar in a bowl.
- Spread the sour cream mixture over the cheesecake.
- Top with mixed berries.
- Chill in the fridge for at least 4 hours before serving.
Notes
- Make sure the cream cheese is at room temperature for easy mixing.
- Do not overmix the batter to avoid cracks in the cheesecake.
- Let the cheesecake cool completely before refrigerating.
- You can use any combination of berries you prefer.
