A simple and hearty beef stew made in a crock pot for a comforting meal.
Ingredients

- 2 pounds beef stew meat, cut into 1-inch pieces
- 4 cups beef broth
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Place the beef stew meat in the crock pot.
- Add the diced potatoes, sliced carrots, chopped onion, and minced garlic.
- Stir in the beef broth, tomato paste, thyme, and rosemary.
- Season with salt and pepper.
- Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
- Stir before serving to mix all the flavors.
Notes
- For thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew in the last 30 minutes of cooking.
- You can add other vegetables like peas or green beans if you like.
- Leftovers can be stored in the fridge for up to 3 days.
