Ingredients

  • 2 pounds beef stew meat, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Place the beef stew meat in the crock pot.
  2. Add the diced potatoes, sliced carrots, chopped onion, and minced garlic.
  3. Stir in the beef broth, tomato paste, thyme, and rosemary.
  4. Season with salt and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
  6. Stir before serving to mix all the flavors.

Notes

  • For thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew in the last 30 minutes of cooking.
  • You can add other vegetables like peas or green beans if you like.
  • Leftovers can be stored in the fridge for up to 3 days.
