Ingredients

- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheese
- 8 corn tortillas
- 1 small onion, diced
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat.
- Add ground beef and onion. Cook until beef is browned.
- Stir in garlic powder, cumin, salt, and pepper.
- Pour in the enchilada sauce and mix well.
- Soften tortillas in the microwave for 30 seconds.
- Fill each tortilla with beef mixture and cheese.
- Roll up the tortillas and place them seam-side down in the skillet.
- Top with remaining enchilada sauce and cheese.
- Cover and cook for 10 minutes until cheese is melted.
- Serve warm.

- Use a non-stick skillet to prevent sticking.
- Ensure tortillas are warm to avoid breaking.
