- 1 lb beef mince
- 1 cup enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheese
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the chopped onion until soft.
- Add the beef mince and cook until browned.
- Stir in garlic powder, cumin, salt, and pepper.
- Spread a layer of enchilada sauce on a tortilla.
- Add a scoop of the beef mixture and some cheese.
- Roll up the tortilla and place it seam-side down in a baking dish.
- Repeat with remaining tortillas.
- Pour the rest of the enchilada sauce over the roll-ups.
- Sprinkle with remaining cheese.
- Bake for 20-25 minutes until cheese is bubbly.
