- 500g beef mince
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 200ml sherry
- 400g canned tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 500ml beef stock
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until soft.
- Stir in diced carrots and minced garlic, cook for 2 minutes.
- Add beef mince, cook until browned.
- Pour in sherry and let it simmer for 3 minutes.
- Add canned tomatoes, tomato paste, thyme, salt, and pepper.
- Pour in beef stock and stir well.
- Bring to a boil, then reduce heat and let it simmer for 30 minutes.
- Serve hot, garnished with fresh parsley.

- Use lean beef mince for a healthier option.
- Feel free to add more vegetables like peas or bell peppers.
- Let the casserole sit for a few minutes before serving for better flavor.
