  • 200ml sherry
  • 400g canned tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 500ml beef stock
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft.
  3. Stir in diced carrots and minced garlic, cook for 2 minutes.
  4. Add beef mince, cook until browned.
  5. Pour in sherry and let it simmer for 3 minutes.
  6. Add canned tomatoes, tomato paste, thyme, salt, and pepper.
  7. Pour in beef stock and stir well.
  8. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
  9. Serve hot, garnished with fresh parsley.
