Ingredients

  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add diced onion and cook until soft.
  3. Add garlic and ground beef. Cook until the beef is brown.
  4. Stir in cumin, chili powder, and salt. Cook for 2 more minutes.
  5. Spread a little enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the beef mixture and some cheese. Roll them up tightly.
  7. Place the rolled tortillas seam-side down in the baking dish.
  8. Pour the remaining enchilada sauce over the top and sprinkle with more cheese.
  9. Bake in the oven for 20 minutes, or until the cheese is bubbly.
  10. Serve hot and enjoy!
