Delicious and easy beef enchiladas for a satisfying meal.
Ingredients

- 1 pound ground beef
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add diced onion and cook until soft.
- Add garlic and ground beef. Cook until the beef is brown.
- Stir in cumin, chili powder, and salt. Cook for 2 more minutes.
- Spread a little enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the beef mixture and some cheese. Roll them up tightly.
- Place the rolled tortillas seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with more cheese.
- Bake in the oven for 20 minutes, or until the cheese is bubbly.
- Serve hot and enjoy!
Notes
- Use corn tortillas for a gluten-free option.
- Feel free to add beans or veggies for extra flavor.
- Let the enchiladas sit for a few minutes before serving for easier slicing.
