- 1 pound ground beef
- 1 can (15 oz) enchilada sauce
- 1 can (15 oz) black beans, drained
- 1 cup corn
- 2 cups shredded cheese
- 8 corn tortillas
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add garlic powder, onion powder, salt, and pepper to the beef. Mix well.
- In a baking dish, spread a layer of enchilada sauce on the bottom.
- Layer 4 tortillas over the sauce, tearing them if necessary to fit.
- Add half of the beef mixture, followed by half the black beans and half the corn.
- Sprinkle 1 cup of cheese on top.
- Repeat the layers: tortillas, beef, beans, corn, and finish with the remaining cheese.
- Pour the remaining enchilada sauce on top.
- Bake in the oven for 20-25 minutes until cheese is bubbly.
- Let it cool for a few minutes before serving.
