Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Add onion, bell pepper, garlic powder, cumin, salt, and pepper to the beef. Cook until vegetables are soft.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Layer 4 tortillas over the sauce, then add half of the beef mixture and half of the cheese.
  6. Repeat the layers with the remaining tortillas, beef mixture, and cheese.
  7. Pour the remaining enchilada sauce over the top.
  8. Bake for 25-30 minutes until the cheese is bubbly.
  9. Let it cool for a few minutes before serving.

Notes

  • Use a non-stick skillet to prevent sticking.
  • For a spicier version, add diced jalapeños to the beef mixture.
  • Store leftovers in the fridge for up to 3 days.
