Description
A simple and delicious beef enchilada bake that is perfect for beginners.
Ingredients

- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 1 cup shredded cheese
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned.
- Add onion, bell pepper, garlic powder, cumin, salt, and pepper to the beef. Cook until vegetables are soft.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Layer 4 tortillas over the sauce, then add half of the beef mixture and half of the cheese.
- Repeat the layers with the remaining tortillas, beef mixture, and cheese.
- Pour the remaining enchilada sauce over the top.
- Bake for 25-30 minutes until the cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- Use a non-stick skillet to prevent sticking.
- For a spicier version, add diced jalapeños to the beef mixture.
- Store leftovers in the fridge for up to 3 days.
