Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Prepare the ingredients: chop the onion, mince the garlic, slice the carrots, and dice the potatoes.
  2. Place the beef chuck roast in the crockpot.
  3. Add the chopped onion and minced garlic on top of the beef.
  4. Layer the sliced carrots and diced potatoes around the beef.
  5. Pour the beef broth and Worcestershire sauce over all the ingredients.
  6. Sprinkle salt, black pepper, dried thyme, and add the bay leaf.
  7. Cover the crockpot and set it to low for 8 hours or high for 4 hours.
  8. Once done, remove the bay leaf and shred the beef with two forks.
  9. Serve the beef and vegetables warm on a plate.

  • For extra flavor, sear the beef in a pan before adding it to the crockpot.
