Ingredients

- 2 lbs beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions
- Prepare the ingredients: chop the onion, mince the garlic, slice the carrots, and dice the potatoes.
- Place the beef chuck roast in the crockpot.
- Add the chopped onion and minced garlic on top of the beef.
- Layer the sliced carrots and diced potatoes around the beef.
- Pour the beef broth and Worcestershire sauce over all the ingredients.
- Sprinkle salt, black pepper, dried thyme, and add the bay leaf.
- Cover the crockpot and set it to low for 8 hours or high for 4 hours.
- Once done, remove the bay leaf and shred the beef with two forks.
- Serve the beef and vegetables warm on a plate.
Notes
- For extra flavor, sear the beef in a pan before adding it to the crockpot.
- Adjust the vegetables based on your preference.
- Store leftovers in the fridge for up to 3 days.
