A fresh and tasty BBQ chicken salad that’s easy to make.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 1/2 cup shredded cheese
  • 1/4 cup cilantro, chopped

Instructions

  1. In a bowl, mix the shredded chicken with BBQ sauce until well coated.
  2. In a large salad bowl, layer the mixed greens.
  3. Add cherry tomatoes, corn, black beans, and diced avocado on top of the greens.
  4. Top the salad with the BBQ chicken mixture.
  5. Sprinkle shredded cheese and cilantro over the salad.
  6. Serve immediately or chill for 30 minutes before serving.
