A fresh and tasty BBQ chicken salad that’s easy to make.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup corn, drained
- 1 cup black beans, rinsed and drained
- 1 avocado, diced
- 1/2 cup shredded cheese
- 1/4 cup cilantro, chopped
Instructions
- In a bowl, mix the shredded chicken with BBQ sauce until well coated.
- In a large salad bowl, layer the mixed greens.
- Add cherry tomatoes, corn, black beans, and diced avocado on top of the greens.
- Top the salad with the BBQ chicken mixture.
- Sprinkle shredded cheese and cilantro over the salad.
- Serve immediately or chill for 30 minutes before serving.
Notes
- Use leftover chicken for quicker prep.
- Feel free to add your favorite veggies.
- Adjust the amount of BBQ sauce to your taste.
