Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with chopped onions over medium heat.
  3. Drain excess fat and stir in black beans, enchilada sauce, garlic powder, cumin, salt, and pepper.
  4. In a baking dish, layer 4 tortillas, half of the beef mixture, and 1 cup of cheese.
  5. Repeat the layers with the remaining tortillas, beef mixture, and top with the remaining cheese.
  6. Bake for 25-30 minutes until cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
