Ingredients

- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheese
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef with chopped onions over medium heat.
- Drain excess fat and stir in black beans, enchilada sauce, garlic powder, cumin, salt, and pepper.
- In a baking dish, layer 4 tortillas, half of the beef mixture, and 1 cup of cheese.
- Repeat the layers with the remaining tortillas, beef mixture, and top with the remaining cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Use any ground meat you prefer.
- Feel free to add vegetables like bell peppers or corn.
- Make sure to cover the casserole with foil if it browns too quickly.
