A simple and delicious asparagus soup that’s perfect for beginners.

- 1 pound asparagus, trimmed and cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until soft.
- Add minced garlic and cook for 1 minute.
- Add asparagus pieces and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in heavy cream and season with salt and pepper.
- Heat through and serve warm.
Notes
- Trim the asparagus ends to avoid tough pieces.
- For a lighter version, use milk instead of cream.
- Store leftovers in the fridge for up to 3 days.
