A delicious and healthy asparagus soup that’s easy to make.
Ingredients

- 1 pound fresh asparagus, trimmed and cut into pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk or plant-based milk
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic. Sauté until they are soft.
- Add asparagus pieces and cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes, until asparagus is tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the milk and heat through.
- Season with salt and pepper to taste.
- Serve hot and enjoy your healthy soup!
Notes
- Make sure to trim tough ends of asparagus.
- For a creamier soup, add more milk.
- You can garnish with croutons or a drizzle of olive oil.
