Ingredients

- 2 large cucumbers
- 1 tablespoon salt
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- Slice the cucumbers thinly and place them in a bowl.
- Sprinkle salt over the cucumbers and let them sit for 10 minutes.
- In a separate bowl, mix rice vinegar, sugar, soy sauce, and sesame oil until the sugar dissolves.
- Rinse the cucumbers under cold water and drain well.
- Add the cucumbers to the vinegar mixture and toss to coat.
- Stir in chopped green onions and sesame seeds.
- Chill in the refrigerator for 15 minutes before serving.
