Ingredients
Scale
- 2 cups warm water (110°F to 115°F)
- 1 packet active dry yeast (2 1/4 teaspoons)
- 1 tablespoon sugar
- 4 cups all-purpose flour
- 1 tablespoon salt
- 1 cup asiago cheese, shredded
- 1/4 cup baking soda
- 1 egg, beaten
- Coarse sea salt, for topping
Instructions
- In a bowl, mix warm water, yeast, and sugar. Let it sit for 5 minutes until frothy.

- Knead the dough for about 5 minutes until smooth. Cover and let it rise for 1 hour.
- Preheat your oven to 450°F (232°C).
- Divide the dough into 8 pieces. Roll each piece into a long rope and shape into a pretzel.
- In a pot, bring 10 cups of water to a boil. Add baking soda slowly.
- Boil each pretzel for 30 seconds, then remove and place on a baking sheet.
- Brush each pretzel with beaten egg and sprinkle with coarse salt and asiago cheese.
- Bake for 12-15 minutes until golden brown.
- Let cool slightly before serving.
Notes
- Ensure water is warm, not hot, to avoid killing the yeast.
- Knead dough on a floured surface to prevent sticking.
- Boiling the pretzels gives them a chewy texture.
