Ingredients

- 1 cup applesauce
- 1/2 cup sugar
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix applesauce, sugar, vegetable oil, egg, and vanilla extract.
- In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Line a muffin pan with paper liners or grease it lightly.
- Pour the batter into the muffin pan, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let the muffins cool for a few minutes before transferring to a wire rack.
Notes
- Store muffins in an airtight container for up to 3 days.
- You can add nuts or raisins for extra flavor.
- Do not overmix the batter to keep muffins fluffy.
