Instructions
- Prepare quinoa according to package instructions and let it cool.
- In a large bowl, combine cherry tomatoes, bell peppers, cucumber, and feta cheese.
- Add the cooled quinoa to the vegetable mixture.
- In a small bowl, mix olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa salad and toss gently.
- Serve immediately or chill in the fridge for 30 minutes before serving.
