A quick and easy 30-minute cauliflower chicken soup that is anti-inflammatory and perfect for beginners.
Ingredients

- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound chicken breast, diced
- 1 head cauliflower, chopped
- 4 cups chicken broth
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup spinach
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and garlic, sauté until softened.
- Add diced chicken and cook until no longer pink.
- Add chopped cauliflower, chicken broth, turmeric, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add spinach and lemon juice, stir well.
- Cook for an additional 5 minutes.
- Serve hot and enjoy.

- Make sure to chop the cauliflower into small pieces for even cooking.
- Use low-sodium chicken broth for a healthier option.
